16 Feb Staff Spotlight: Executive Chef Chris
We are so excited to welcome new Executive Chef Chris Kitner to The Dream Team! Chef Chris brings over 25 of experience and a passion for creating delectable meals. Influenced by a classical culinary style, he prides himself in a very simple and clean taste and appearance.
What is your story? How did this become your career?
I’m originally from Clarksburg, West Virginia. I always enjoyed helping my mother cook and loved to create new dishes for my family to try, so the Culinary Arts just seemed like the natural thing to do. I graduated from The Pennsylvania Institute of Culinary Arts in 1992, where I had the privilege of studying under internationally recognized chefs.
Throughout my 25-year career, I’ve had the pleasure of working in a variety of hotels, resorts, and private clubs. I spent three years at Pinehurst Resort, five years at Grove Park Inn, and five years at Biltmore Estate in Asheville, North Carolina. Just prior to moving to Nashville, I was the Executive Chef at the Commerce Club in Greenville, South Carolina for five years.
I think most chefs are always looking for new and exciting adventures, so when a good friend of mine introduced me to Dream Events and Catering I took a trip here to see what the Nashville catering scene was all about. I liked what I saw, and everyone on The Dream Team really excited me about the culinary adventures in a new city. I’m still new to the area, but I am enjoying Nashville so far!
What food trends are you expecting in 2017?
I have been seeing a lot of self-sustaining “field to fork” food on a variety of menus, which is my approach and style as well. I love achieving the simplest tastes by using the freshest ingredients in their purest forms. There has also been a lot of excitement around plant-based entrees, which I hope is a trend that is here to stay. Again, when you use the freshest ingredients the taste is just unbeatable. I’m also expecting a lot more international cuisine and international fusion to pop up in 2017 – Latin food and putting together non-traditional pizzas are some of my personal favorites.
What are your goals working with Dream?
I’m very happy to be a part of the great team here at Dream. With my experience, I hope to continue the success and growth of this amazing company. I’m really excited to make some delicious food and contribute to successful events all throughout my new community.
When you’re not working, what are you doing?
I love to spend time with my 12-year-old daughter, Grace. Whether it’s listening to music or hanging out outdoors, I enjoy my downtime by spending it in good company with my daughter or some good friends.
